Bonnie's Curried Moong Dal

This dish is really a mouthful of interesting flavors. It’s spicy with a hint of ginger, and slightly sweet because of the prunes. It's packed with protein, fiber and nutrients and is great to have in the fridge for food on the go! It reheats great!

This dish is really a mouthful of interesting flavors. It’s spicy with a hint of ginger, and slightly sweet because of the prunes. It's packed with protein, fiber and nutrients and is great to have in the fridge for food on the go! It reheats great!

Cooking time: 30 minutes or less

Ingredients

1 cup dried split yellow moong dal

2 cups water

1-2 tbsp curry powder

1 tbsp of fresh grated ginger

1 tbsp fresh diced garlic

1 diced sweet potato

1 diced onion (any kind)

1/2 cup of dried prunes

Salt and pepper to taste

Hint of olive oil

Directions

Boil water with a little salt. Add yellow moong dal and let simmer covered for about 20 minutes until soft. While simmering, add in garlic, ginger, curry. You can also add in diced onion, turmeric, cumin. In a separate sauce pan, cooked up a diced sweet potato until slightly soft and set aside.

In a skillet, heat olive oil and cook diced onion. Add little more curry if desired. Toss in prunes and the cooked sweet potato. This only takes a few minutes. Then mix that into the fully cooked moong dal and serve immediately!
