Week 2 of Cooking with "Get Bon" Recipes

I wrote my last blog about my neighbor Brian and I cooking together. I've had so much fun teaching him how to get healthier through foods that are yummy and fun to make! In the process he's gone from 424 lbs to 407 in around 2 weeks!

I wrote my last blog about my neighbor Brian and I cooking together. I've had so much fun teaching him how to get healthier through foods that are yummy and fun to make! In the process he's gone from 424 lbs to 407 in around 2 weeks!

For the first time ever, he's been able to walk up his steps without being winded! He walked the entire grocery store with me without the electric cart for the first time in years! I am so happy for him! Just that small amount of weight loss is improving his health significantly! He is proud. He is more motivated! 

Brian only had 2 cheats during the first week. He had 1 soda and 2 fast food breakfast burritos. That is not bad, considering he used to eat fast food every day for over a year! I decided to take his cheat and make it a healthy choice so that he won't be tempted by the bad one! Smart, right?

Here are the recipes we cooked for week 2 of my "Get Bon" program with Brian:

Bonnie's Breakfast Burritos

 

Ingredients

Makes 9 burritos that you can freeze individually in freezer bags

1 package low-fat chicken/turkey sausage of your choice (We chose an artichoke/garlic flavored pack that was all natural)

1 onion, diced

1 sweet red pepper, diced

1 1/2 cups of store-bought, sugar-free salsa

1 pint egg whites

1/2 bag of baby spinach

4 cloves of garlic diced

2-3 tbsp organic taco seasoning (that does not contain sugar)

1 package large whole-grain tortillas or brown rice tortillas

Directions

Dice and brown the sausage in a skillet with a little olive oil or grapeseed oil and set aside. In the same skillet, cook the onion and sweet red pepper and garlic. Toss in the baby spinach to wilt and set aside. In the same skillet, cook the egg whites till fluffy.

Take the tortilla, add in about 1 cup of the cooked eggs, 1 cup of filling, and a few heaping spoonfuls of salsa. Flip up the bottom of tortilla and fold in the sides. Place rolled up tortilla in freezer bags and keep in freezer to have 1 at a time!

Options for seasoning: you can also add in jalepenos, additional onions, cumin or taco seasoning  or even use a vegetarian grain sausage instead. 

Bonnie's Italian Chicken w/ Whole Grain Penne Pasta

Brian gave this dish 2 thumbs up!

 

Ingredients

Makes 8 servings

2 all-natural deboned chicken breast

1 onion

1 1/2 cups of mushrooms

2 sweet red, green or yellow peppers cut into strips

Lots of garlic! about 5-8 cloves diced

2 large tomatoes diced or 1 (12-oz) can of low-sodium Italian style tomatoes

Season w/ fresh basil, oregano, thyme, 

3-4 cups of broccoli

1/2 box of whole grain penne pasta cooked

Directions

Cook the chicken in skillet with olive and set aside. In a separate skillet, cook the peppers, garlic, and onion. Toss in baby spinach with an extra drizzle of olive oil. Once the spinach is wilted, toss in the chicken and tomatoes. Let simmer for 1 minute. 

Mix penne in with the other ingredients to coat pasta. Then divide into 2 cup servings into plastic containers. Keep some in fridge and freeze the rest!
