This recipe is more than enough for one meal. 1 serving is a 4 oz. slice; I weigh my portion and then freeze the rest, so I can pull one out and defrost for a quick dinner later in the week. Mangia!
Meatloaf Ingredients:
3 lbs. ground turkey
1/2 cup whole wheat bread crumbs
1/2 cup liquid egg substitute or two beaten egg whites
1 tbsp. chopped basil
1 tbsp. oregano
1 tbsp. chopped parsley
Directions: Mix all the above ingredients together, divide in half and spread each half out to form a rectangle.
Filling Ingredients:
2 tbsp. olive oil
5 cloves garlic, chopped finely
2 red peppers, chopped finely
1 red onion, chopped finely
1 cup broccoli and cauliflower
Directions:
In a pan, sauté the garlic and onion with 2 tbsp. of olive oil until browned. Add the remaining veggies and sauté until wilted. Spread this veggie mixture evenly over the two turkey rectangles and roll like a jelly roll, closing both ends. Place in a shallow baking pan and Bake in a 350 degree oven until browned. Serve with a side salad.
