So we hooked her up with the best vegan coach we know, someone who lived and loved the transformation: Rocco, The Meat-Loving Cowboy. Here he shares with Poppy his secret (and spectacular) recipe for 2-Minute Veggie Burgers.

Good Morning Poppy,
Twenty-eight days can change your life! I am living proof. Now here is my favorite thing to eat. Take a veggie/soy burger and heat it in the microwave. While it is heating, take a non-stick pan with no oil and brown about a teaspoon of green onion and garlic. When the burger is done, place the garlic and onion on top and INSTEAD OF 2 SLICES OF BREAD make your sandwich with 2 thick slices of tomatoes. That burger is my new best friend.
Stay away from processed foods – mostly anything in a box or can. Five things you should NOT consider eating for a while: 1) Anything with a face or legs 2) Anything processed 3) Sugar 4) Saturated fat 5) Trans fat. The weight will come of fast if you include the 10,000 Steps. I don’t go anywhere without my pedometer.
