Eat the Colors of the Rainbow

Many of you reading this are hoping to lose weight and regain your health. Medical problems may feel like a storm in your life. Even carrying extra weight may seem as though a dark cloud has landed on you and decided to rain with no end in sight! Yet, there is hope in a rainbow. What do I mean by that? I live in a cloudy part of the country and there is nothing more beautiful to me than seeing a rainbow in the sky. It symbolizes hope of the sun coming out and the skies clearing up. Hope that the rain is going away for good. As each of you chose life and health after feeling the dark clouds of gloom in your life, choosing to eat the colors of the rainbow also brings health and wellness! My tip to you is to eat foods rich in all the colors of the rainbow! I’ll share some of my favorite foods in each color category. 

So, of course first there is red. I think I have a tie here for my favorite, between grape tomatoes and pomegranates….both a robust red color. They are totally different in taste and texture, but full of flavor and health!

Orange– sometimes there is nothing tastier than a juicy orange. They are high in fiber, vitamin C and potassium. I love all the varieties of oranges as well –Navel, Valencia, tangerines, blood and mandarin. 

Now we move to yellow.  I think they should change the saying to “a banana a day keeps the doctor away.”  Although, now that Dr. Oz is in town, maybe we should coin “a banana a day brings Dr. Oz to stay!”  Bananas every day are part of my “automation!” Super high in potassium, these yummy, creamy fruits are also full of B vitamins, vitamin C, magnesium and fiber! They are also great to use for substituting for oil in many baked goods– as if eating them fresh isn’t already good enough! 

The wonderful color green! Spinach is by far one of my very favorite foods. I could eat it with every meal. In fact, stay tuned because I am going to devote an entire blog to spinach and give you some of my favorite recipes using it. It is a real powerfood and jam packed with health benefits.

I’m no longer feeling blue when I eat blueberries! In the summer where I live we have a local farmer that has rows and rows of blueberry bushes that are ripe usually in August. Even the summer that I was 9 months pregnant in the peak of the summer heat, you better believe nothing was going to stop me  other than labor and delivery itself from going to pick blueberries! These delicious berries are currently my son’s very favorite food! 

And the rainbow ends with purple. Now, having an Italian mother who makes a killer eggplant dish, the robust flavor of eggplant always tastes like home to me.  Now, I enjoy eggplant roasted, grilled, stir fried with other assorted veggies, or even pureed into one of my favorite Mediterranean dishes called Babba Ganoush! Yummy!

Well, there you have it— the colors of the rainbow and a list of my favorite foods that are within each vivid shade. My best advice is to eat foods rich in all the colors and varieties. Just as rainbows are visions of sunshine after storms, may you all find wellness through making your health your number one goal. There is more than a pot of gold at the end of a rainbow; there is health.   Make your health your goal today.  Set your focus on what you desire at the end of your rainbow of health, and don’t sacrifice what you want the most for what you want right now!
