Many of you ask, “What is it, exactly, that you eat?” So, I thought I’d journal one day for you. My day is coming to a close, so I will recount my food intake for you before I head off to bed. Because of the fact that I tend to automate my meals, most days have a very similar feel to them. They do, however, vary some, as I give myself some flexibility
especially in regard to dinner…So, here’s a sample:
A typical day in the life of Nancy Schuessler, Food Diary for 12/10:
Breakfast: 6 egg whites, topped with red pepper flakes, wrapped in a fiber wrap.
Snack: Apple and rice cake with almond butter (preferably, raw).
Lunch: Spinach salad, topped with shredded cabbage, carrots, mushrooms, red onions, celery and tuna fish with a ginger/soy/flax seed dressing.
Snack: Crispbread cracker topped with fat-free, organic, refried beans and salsa.
Dinner: Stuffed red peppers with brown basmati rice, dark red kidney beans, black beans, cilantro, red onion, mushrooms, topped with salsa and fresh avocado.
Snack: Greek low fat yogurt (original flavor) that I froze in my freezer for a frosty treat!
Here is a big key: WATER, WATER, WATER – all day long. So much so that I’d like to let you know that I may, perhaps, need someone to throw me a life raft; I’m floating away! By eating healthy, nutritious meals, combined with powerhouse snacks, I feel
satisfied all day long. My meals are usually full of lean protein and fiber that helps to keep me full. I love spinach! In fact, I sometimes think that there may be no greater food on the planet! When I was pregnant, I literally ate pounds of spinach weekly. I found myself craving it! You may know or hear that some pregnant women crave ice cream, or even pickles, but know for sure that I craved spinach! Sometimes, I have thought, that I’m surprised Benaiah wasn’t born as a "Popeye" look-alike.
