Yesterday, when I went grocery shopping, I took a photo of my favorite section...the fresh produce! When I walk into any grocery store, I try to stay shopping on the "outside" aisles, I rarely go into the middle because FRESH is BEST!
Oftentimes, when you buy food in the aisles the list of preservatives is a mile high and the fat found in the products was intended to last 'till the next millennia! I like to think of the inside as the grocery cemetary. I know that sounds a bit dramatic, but it keeps me from buying things that are not as good for me.
I always try new, fresh foods as well. For example, one of the foods I never even knew before my new way of thinking was a root vegetable called a jicama. I used to love to devour potato chips by the bag. Once they were open, they didn't last long. Now, I buy a jicama, which you can find in the fresh produce section. I'm sure you're saying what in the world IS it, and once I buy it, what do I do with it? Well, I'll tell you what I do with it...try making veggie chips!
First, I take a mandolin slicer and slice thin, chip-like sections. Then, I sprinkle sea salt and cayenne pepper on them. Lastly, I put them on a baking sheet in a layer and use an olive oil spray to lightly coat them. (You can now find pure olive oil in a mister-style can!) It helps to reduce unnecessary calories on this naturally low-cal, low-fat snack! The jicama has only 50 calories per cup, and is extremely high in vitamin C, nearly 6 grams of fiber, and high in potassium! Are you in love with it yet? Taste it and you'll be smitten! After you have assembled them on a baking sheet, cook them in the oven at 400 degrees until the edges are brown. There's no guilt in this snack! Again, fresh is best...explore the beauty and variety.
