Today I was feeling a little adventurous and bold, and had some extra time on my hands. As I sat and planned out my meals for today, I was stumped when it came to lunch. I did not want plain salmon or another chicken breast, and a cold salad did not seem appetizing.
I pulled myself away from my laptop and decided to play Top Chef in my kitchen. I looked at the salmon filet and decided it was time to get creative. Here is the delicious lunch meal I created that has a hint of heat and a delicate tangy taste. I call it “Stacy’s Sizzling Salmon.”
Stacy’s Sizzling Salmon & Smoldering Brown Rice
1 salmon filet
3 oz low-fat plain Greek yogurt
5 tbsp garlic/dill seasoning
1 tsp liquid smoke
1 tbsp crushed red pepper flakes
½ yellow onion
1 tbsp crushed garlic
4 asparagus spears
1 tbsp extra virgin olive oil
1 cup brown rice
First, make the marinade for the salmon. Combine Greek yogurt, garlic/dill seasoning, crushed red pepper flakes, and liquid smoke then spread evenly on salmon filet. Let salmon marinate for 1-2 hrs. Cook salmon for 25 minutes at 425 degrees.
While the salmon is cooking, get a pan and heat extra virgin olive oil then sauté onions and garlic. Chop up asparagus spears and add to onion mixture. Next add water and proceed to cook brown rice according to package directions.
