Lemon Caper Dressing for Salads

  • 1 medium lemon
  • 3 tbsp finely chopped sweet onions
  • 2 tbsp Dijon mustard
  • 2 tbsp drained capers, finely chopped
  • 1/4 cup extra-virgin olive oil


Zest 1 lemon into a bowl and set aside.Squeeze the juice from the lemon into the bowl, add the rest of the ingredients, and stir well.
