Ingredients

  • 1 lb boneless skinless chicken breasts, cut into 1/2-inch wide strips
  • 1 small cauliflower head, trimmed and broken into small florets
  • 1 medium red bell pepper, stemmed, seeded, and cut into thin strips
  • 1 medium yellow bell pepper, stemmed, seeded, and cut into thin strips
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp bottled dry Cajun seasoning blend
  • 2 tbsp red wine vinegar

Directions

1. Heat oven to 375°F.

 

2. Toss the chicken, cauliflower, and both peppers with the olive oil and Cajun seasoning blend in a large roasting pan until evenly coated.

 

3. Roast for 25 minutes, stirring a few times, or until the chicken is cooked through and the vegetables are tender.

 

4. Sprinkle the vinegar over the hot ingredients and scrape up any browned bits in the pan before serving.
