Ingredients

  • 1 tbsp coconut oil
  • 5 medium scallions, thinly sliced
  • 1 tsp minced garlic
  • 1 lb medium shrimp (about 30 per pound), peeled and deveined
  • 1 red bell pepper, stemmed, seeded, and cut into 1/2-inch wide strips
  • 4 oz fresh green beans, stemmed and cut into 1-inch pieces (about 1 cup)
  • 1 tbsp bottled jerk seasoning blend
  • 1 tsp apple cider vinegar
  • 1/2 cup light coconut milk
  • 1/4 cup low-sodium vegetable broth

Directions

1. Melt the coconut oil in a large saucepan over medium heat.

 

2. Add the scallions and garlic; cook, stirring often, for 1 minute.

 

3. Add the shrimp; cook, stirring occasionally, for 3 minutes, or until pink.

 

4. Add bell pepper, green beans, and jerk seasoning. Cook for 1 minute, or until fragrant.

 

5. Stir in the vinegar, then pour in the coconut milk and broth.

 

6. Bring to a simmer, stirring occasionally. Cover, reduce the heat, and simmer slowly for 5 minutes to blend the flavors.
