Avocado and Pumpkin Seed Pesto

This fall-themed take on traditional pesto is not only delicious but super versatile too. Toss it with pasta, add it to your favorite bruschetta recipe, or simply use it as a healthy dip.  

 

Ingredients

  • 1 avocado
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup grated Parmesan
  • 1/2 cup chopped parsley
  • 1 clove garlic, chopped
  • salt and pepper, to taste

Directions

1. Purée ingredients in a food processor until smooth. You may want to add a little water to thin out pesto to desired consistency. 

 

2. Toss with pasta or use a dip. Enjoy!
