These fries are the perfect small plate to share with family and friends. By substituting potatoes for avocados, you are taking advantage of its anti-inflammatory properties — all while cutting down on carbs. You don’t need a deep fryer to make delicious fries when you can bake them in the oven and avoid using fatty oils.
- 1 cup panko bread crumbs
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 2 large avocados
- ¼ cup flour
- 1 egg, beaten
- 1 tbsp fresh lemon juice
1. Mix together panko breadcrumbs, paprika, garlic powder, salt, and pepper in a bowl.
2. Peel and pit the avocados and cut lengthwise into fries.
3. Dip the slices in flour then an egg wash and coat in panko breadcrumbs with a squeeze of lemon.
4. Roast in the oven on a greased rack for about 15 minutes until golden.
