- 2 medium avocados
- 2 tsp lemon juice
- 1 lb powdered sugar
- 1/2 tsp lemon extract
1. Peel the skin off the avocados and cut into chunks. Add in the lemon juice.
2. Use a hand mixer to throughly blend avocado until smooth.
3. Mix again, this time adding powdered sugar slowly until creamy. Then add lemon extract and mix.
4. Top cupcakes or cake with the frosting and enjoy!
