  • 1 tbsp extra-virgin olive oil
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red bell pepper
  • A few slices red onion, chopped
  • 1/2 cup sliced mushrooms
  • 1 large omega-3 egg
  • 3 large egg whites
  • 2 tsp crumbled goat cheese
  • 1 slice rye toast


Heat the olive oil in a small skillet over medium heat. Add the green and red peppers, onion and mushrooms and sauté until the vegetables soften.
Meanwhile, beat the egg and the egg whites with a wire whisk in a small bowl until blended. When the vegetables are soft, transfer them to another bowl and set aside.
Pour the egg mixture into the skillet and cook several minutes over medium heat until the eggs are set.
Spread the vegetables evenly on one side of the cooked egg, top with the goat cheese and using a spatula fold the omelette in half over the vegetables. Enjoy with a piece of rye toast – after your detox stage.
