Banana, Walnut, and Golden Flaxseed Buckwheat Pancakes

Bananas are low in sodium and full of potassium, which helps regulate heart function. With the addition of walnuts, you can also reduce the risk of heart disease and load up on omega-3 fatty acids and antioxidants, which are also found in flaxseed. This breakfast will taste more like a guilty pleasure than a nutrient-packed pancake.


  • 1 banana, ripe
  • 1 tsp vanilla extract
  • 2 tbsp golden flaxseed
  • buckwheat pancake mix
  • banana slices for topping
  • 1/4 cup walnuts, chopped for garnish


1. Add the banana, vanilla extract, and golden flaxseed to the buckwheat pancake mix. Combine thoroughly.


2. Heat up a pan with cooking spray or butter. Pour in the batter using a ladle or ice cream scoop to keep portion equal.


3. Once the air bubble form on the pancake, flip it over. When the underside of the pancake is golden, remove the pancake.


4. Top the pancakes with sliced banana pieces and walnuts. Maple syrup is optional.
