- 6-8 100% whole wheat tortillas
- 1 can (14-15 oz) pinto or black beans, drained and rinsed
- 1 package taco seasoning for fajita seasoning
- 1/4 cup water
- 1 red bell pepper
- 1 package store-bought guacamole
- red onion
- 5-6 plum tomatoes
Heat beans in medium pot over medium heat, add the 1/4 cup water and package of seasoning.
Stir and let cook for 5 to 6 minutes. Remove from heat. Cut pepper, lettuce, tomatoes and onions into 1/4-1/2 inch slices to prepare to assemble on burrito.
Spread 1 tbsp of guacamole on the burrito shell and then add desired vegetables and lettuce. Add beans on to shell and wrap burrito.
