High in fiber and full of protein, black beans fuel your body and fill your stomach. Avocados are full of omega-3s, vitamins and minerals that are all essential to your body.
- 4 cups cooked black beans
- 2 cups diced Vidalia onions
- 2 avocados, diced
- 3 tbsp raw apple cider vinegar
- 2 tbsp flaxseed oil (or any healthy oil)
- 2 tsp maple syrup or honey
- pinch salt
Mix black beans, onion and avocado in bowl.
Whisk together vinegar, oil, maple syrup or honey, and salt.
Combine all ingredients and toss gently.
Makes 4 servings.
