Black Bean Avocado Salad

This salad can be thrown together in minutes for a meal or side that is short on time, but not on flavor. Make it ahead of time for a quick lunch on the go or serve at a dinner party for a dish that is sure to have guests asking for the recipe. High in fiber and full of protein, black beans fuel your body and fill your stomach. Avocados are full of omega-3s, vitamins and minerals that are all essential to your body.       


  • 4 cups cooked black beans
  • 2 cups diced Vidalia onions
  • 2 avocados, diced
  • 3 tbsp raw apple cider vinegar
  • 2 tbsp flaxseed oil (or any healthy oil)
  • 2 tsp maple syrup or honey
  • pinch salt


Mix black beans, onion and avocado in bowl.

Whisk together vinegar, oil, maple syrup or honey, and salt.

Combine all ingredients and toss gently.

Makes 4 servings.
