We’ve all heard the old adage that breakfast is the most important meal of the day and it’s true! People who eat breakfast and make it the largest meal of their day tend to have a lower BMI. The key is to eat smarter — an even mix of protein, fat, and grains will give your body enough energy to sustain you all day. Bite Club member Tiffany created a recipe that has it all: protein from the cashews, healthy fat from the coconut oil, and complex carbs in the grain-based granola.

Ingredients

  • 1 cup raw cashews
  • 8 pitted dates
  • 1 tbsp coconut oil
  • 1 tsp almond oil
  • 1 tsp vanilla extract
  • 1 cup water
  • 1-2 oz grain-based granola
  • strawberries
  • blackberries
  • blueberries
  • raspberries
  • sprinkle of coconut flakes

Directions

1. In a blender, grind the cashews, dates, oils, vanilla, and water to a smooth, creamy texture.

 

2. In a cereal bowl, add 1-2 ounces of grain-based granola. Add a medley of berries and a sprinkle of coconut flakes as toppings.

 

3. Add cashew cream on top and enjoy!
