Chickpea Sandwich

This recipe promotes optimal brain health. You're going to love this sandwich. In between two pieces of toasted rustic bread, are chickpeas, avocado slices and roasted sunflower seeds, among other delicious and healthy ingredients, dressed with an incredible lemon tahini herb sauce.

Ingredients

  • 1 can chickpeas
  • 1/4 cup roasted unsalted sunflower seeds
  • 3 tbsp vegan mayo (sub tahini for a more earthy, nutty flavor)
  • 1/2 tsp dijon or spicy mustard
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh dill, finely chopped
  • 1/2 tsp turmeric powder
  • 1/2 tbsp lemon juice (or juice of half a lemon)
  • 1 pinch each salt and pepper
  • 4 pieces rustic bread, lightly toasted
  • sliced avocado, onion, cucumbers, tomato, and lettuce for serving
  • lemon tahini herb sauce to taste

Directions

1. Prepare the lemon tahini herb sauce and set aside.

 

2. Add chickpeas to a mixing bowl and lightly mash with a fork for texture.

 

3. Then add sunflower seeds, mayo, mustard, red onion, dill, salt and pepper and mix with a spoon. Taste and adjust seasonings as needed.

 

4. Toast bread lightly and prepare any other sandwich toppings you desire (tomato, onion, lettuce, avocado). Scoop a healthy amount of filling onto two of the pieces of bread, add desired toppings and sauce, and top with other two slices of bread. Serve and enjoy!
