Chocolate Chip and Coconut Buckwheat Pancakes

Don't let this recipe name deceive you! Although the breakfast does have chocolate in it, the added chia seeds offer you the nutrition you won't find in a typical pancake. Chia seeds are chock-full of protein, fiber, antioxidants, and omega-3 fatty acids. These fighters increase energy, prevent blood-sugar spikes, and improve digestion, all in one chocolaty pancake. 


  • 1 tsp vanilla extract
  • 1 tbsp organic white chia seeds
  • 1/2 cup dairy-free dark chocolate chips, plus more for topping
  • buckwheat pancake mix
  • 1/4 cup shredded unsweetened coconut


1. Add vanilla extract, white chia seeds, and the dairy-free chocolate chips to the buckwheat pancake mix. Make sure everything is well combined.


2. Heat up a pan or griddle with cooking spray or butter. Pour the batter using a ladle or ice cream scoop.


3. When air bubbles start to form, flip the pancake. Check on the underside, if it's golden, remove the pancake.


4. Top the pancakes with more chocolate chips and the shredded coconut.
