Chocolate Espresso Tofu Mousse

  • 12 oz extra firm tofu
  • 2 oz cocoa bittersweet chocolate
  • 6 tbsp cocoa powder
  • 1 tsp agave nectar
  • 2 tsp vanilla
  • 2 tbsp instant espresso powder
  • 2 banana


Place tofu in food processor and blend until creamy, add bananas and process until smooth. Melt chocolate and add to tofu along with remaining ingredients and process until smooth. Transfer to individual dishes or a large bowl.
