Chris Powell's Poached Salmon

Ingredients

  • 1 (6 oz) piece salmon
  • 1/4 cup sliced onions
  • 1 tbsp mustard seeds
  • 2 bay leaves
  • 2 tbsp wine vinegar

Directions

Fill a medium pan with about 1/2 inch water.

Add the onions, mustard seeds, bay leaves and vinegar and bring to a boil.

Gently slide the salmon into the pan, lower the heat to a slow simmer.

Cover the pan and gently cook the fish for about 10 minutes.
