Cold Cucumber Soup

Dehydration can cause your body's energy levels to drop. Make sure to not only drink water throughout the day but to also eat hydrating fruits and vegetables -- like cucumbers! Blend this soup together quickly and snack on it during the day for a natural energy boost.

Ingredients

  • 1 large cucumber, peeled and seeded
  • 1 cup plain yogurt
  • 1/2 cup sour cream
  • 3/4 cup vegetable broth
  • 1/4 cup fresh mint
  • 1/4 cup fresh dill
  • 1 small clove garlic

Directions

1. Throw ingredients into a blender and blend until smooth. 

 

2. Chill soup in the refrigerator until ready to eat.
