White pasta sauce, like alfredo, can pack in the calories and help you pack on the pounds. Give a lower calorie version a try by using cottage cheese as the main ingredient. Just make sure to buy low sodium cottage cheese (5% or less) for a healthier sauce.
Recipe from James Briscione and The Institute of Culinary Education
- 1 cup cottage cheese
- 1/3 cup low-fat milk
- 1/4 cup grated Parmesan cheese
1. Combine the cottage cheese and milk in a food processor and blend until smooth.
2. Transfer to a sauté pan and warm over medium-low heat. When hot, stir in the Parmesan and cooked pasta. Serve immediately.
