- 16 oz silken tofu
- 1 cup basil leaves
- 3 tbsp cashew butter
- 2 bunches broccoli, steamed about 3 minutes
- 1 pinch salt
- juice of one lemon
- freshly ground pepper
Process all ingredients in a blender and serve cold or gently heat it for a warm treat. Garnish each cup with one or two basil leaves.
