Creamy Spinach Coconut Soup

Both spinach and coconut are considered superfoods, meaning that they're packed with vitamins and minerals for maximum nutrients with minimal calories. 

Ingredients

  • 10 oz frozen chopped spinach, defrosted
  • 1/2 cup coconut milk
  • 1 ripe banana
  • 1/2 tsp ground cumin
  • pinch of cayenne
  • pinch of salt

Directions

Combine all ingredients in a blender and blend until smooth and creamy.

Serve hot or cold. 
 

Yields 2 cups.
