Even if you typically hate spinach, you’ll love this creamy spinach dip. The Greek yogurt’s rich flavor balances out the bitterness of the spinach. Plus, you’ll be enjoying plenty of potassium, folate, fiber and vitamins with every dip!
- 10 oz package frozen chopped organic spinach, thawed and well drained
- 8 oz soft tofu
- 1 tbsp olive oil
- 1/4 cup Greek yogurt
- 2 tbsp lemon juice
- 1/2 tsp salt
- Freshly ground pepper
- 1 cube no salt added vegetable bullion
Purée all ingredients in a food processer until smooth. Serve with cut up vegetables or homemade pita chips.
