Rich in vitamin C, strawberries and blueberries are a great boost to your immune system and perk up the traditional parfait recipe.
- 1 cup strawberries or blueberries
- 2 tbsp coconut butter
- 1/4 tsp non-alcoholic vanilla extract or fresh vanilla from a pod
- 1/4 cup roasted nuts, chopped
Place the fruit, coconut butter and vanilla in food processor and puree for about 1 minute or until smooth.
Pour into an individual dessert cup and top with crushed nuts. Enjoy!
