Decadent Hot Chocolate

This sweet treat is an ideal alternative to the high-calorie and high-sugar hot chocolate you are probably used to. This recipe will give you a rich and luscious hot chocolate, along with the deception that you are drinking something that is far worse than just three simple ingredients! This recipe is courtesy of the Institute of Culinary Education


  • 1 quart skim milk
  • 1 1/2 cups 70% dark chocolate
  • 1 pinch salt


1. Place one quart of skim milk in a medium-size pot and bring to a boil over a medium flame. 

2. Place 1 1/2 cups of 70% dark chocolate chips (if using chocolate from a block, chop it into small pieces first) into a medium-size mixing bowl, along with a pinch of salt. 

3. Pour hot milk over chocolate. Whisk until the skim milk and chocolate makes a smooth mixture and the chocolate is fully melted. 

4. Return this mixture to the pot and return to a simmer over low flame. Make sure to stir the hot chocolate to avoid scorching. As the hot chocolate is slowly brought to a boil, it will slowly thicken -- this is completely natural and desireable.
