- 1/2 cup brown rice
- 1 tbsp olive oil
- 2 eggs
- 1 cup vegetables of your choice
- 1 pinch sesame seeds
- 1 tbsp low-sodium soy sauce
- 1 pinch turmeric
- 1 tsp Sriracha sauce
Put rice in a skillet with olive oil. Add eggs and vegetables: carrots, corn, peas, shredded broccoli, artichokes and onions are all good options. Cook until all is warmed through and the eggs are cooked. Top it off with sesame seeds, a splash of low-sodium soy sauce, turmeric and Sriracha sauce.
