Easy Vegetable Pizza

Ingredients

  • 4 large 100% whole grain pitas
  • 2 cups pasta sauce, low sodium
  • 1/2 cup chopped shiitake mushrooms
  • 1/2 cup chopped red onion
  • 10 oz frozen broccoli florets
  • 1/2 cup shredded non-dairy mozzarella-type cheese

Directions

Preheat the oven to 200°F. Place pitas on two baking sheets and warm for 10 minutes. Remove from oven and spoon on the pasta sauce. Sprinkle evenly with the mushrooms, onion and broccoli. Add a light sprinkle of cheese. Bake for 30 minutes.
