Farro, Baby Kale & Buttery Almond Lettuce Cups

Ingredients

  • 4 tbsp I Can't Believe It's Not Butter!® Spread, divided
  • 1/4 cup chopped natural almonds
  • 6 cup baby kale
  • 2 cup cooked farro
  • 1/4 tsp ground cumin
  • 2 tsp lime juice
  • 1 small avocado, diced
  • 8 bibb lettuce leaves

Directions

Melt 1 Tbsp. Spread in large nonstick skillet over medium heat and cook almonds, stirring frequently, until toasted, about 2 minutes; remove and set aside.

Melt remaining 3 Tbsp. Spread in same skillet over medium-high heat. Add kale, farro, and cumin and cook, tossing, until kale is wilted and mixture is hot, about 2 minutes.

Stir in lime juice, then avocado. Spoon into lettuce leaves and sprinkle with almonds.
