Greek Salad Recipe

Ingredients

  • 3 medium cucumbers, peeled and sliced
  • 1 medium red onion, sliced
  • 1 clove garlic, finely diced
  • 4 tomatoes, sliced
  • 4 oz goat cheese
  • 1 oz mixed black and green seedless olives
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 2 tsp freshly squeezed lemon juice
  • 1 twig fresh oregano, chopped
  • 1 pinch salt and pepper

Directions

In a medium bowl, add the oil, vinegar, lemon juice and the garlic together. Stir and set aside.
 

In a large salad bowl, combine all the other ingredients, reserving half portions of the goat cheese and olives for garnish and mix.
 

Then, add half of the oil mixture to the salad and mix well, making sure the ingredients are all coated.
 

Adjusting seasonings, keep in mind that goat cheese and olives can be salty.
 

Sprinkle the rest of the goat cheese and olives on top of the salad and then drizzle the rest of the oil mixture.
 

Enjoy with garlic bread or pita bread.
