Dr. Oz learned how to make this traditional Moroccan soup while on a memorable vacation with his son. The recipe is bursting with flavor and packed with lentils, a fiberful superfood that'll keep you feeling full long after you've had your last spoonful.

Ingredients

  • 2/3 cup onion
  • 1/3 cup lentils
  • 1/2 bunch parsley, chopped
  • 2/5 cup celery
  • 1/2 bunch coriander, chopped
  • 6 1/3 cups water
  • 3 chopped tomatoes (with seeds removed)
  • 1/3 cup chick peas, dried or tinned (if dried soak for two hours beforehand
  • 1/3 cups rice
  • 1 tbsp tomato paste
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 1/2 tsp black pepper (powder)
  • 2 tsp salt
  • 1 1/3 tbsp olive oil

Directions

1. In a pot, sweat the chopped onions, chopped celery, and chopped tomatoes in olive oil for about five minutes.

 

2. Add the lentils, chick peas and tomato paste and cook for five minutes.

 

3. Add the water and cook for 30 minutes.

 

4. Mix the flour with a little warm water to make a wet paste and then add it to the soup. 

 

5. Bring to boil. 

 

6. Add the chopped parsley and coriander and serve.
