Starting your morning as a vegan is a great way to get all of your nutrients and prepare your system for the rest of the day. Chia seeds are a protein that expand when eaten to make you feel fuller and is one of the easiest breakfasts out there. So start your morning right with this chia pudding.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened coconut milk
  • 1/2 tbsp agave nectar
  • 1/4 cup mango, diced

Directions

1. In a small bowl, mix together chia seeds, coconut milk, and agave nectar.

 

2. Cover and refrigerate overnight.

 

3. Remove from fridge, making sure the pudding looks thick and chia seeds have gelled.

 

4. Top with diced mango and serve immediately.
