Jose Garces' Guacamole

Iron Chef winner Jose Garces is an expert on authentic Latin cuisine. According to Chef Garces, the biggest guac mistake people make is using avocados that are too hard; using ripe avocados will result in soft, creamy guacamole. Chef Garces' other guacamole tip: If you're not going to eat it right away, stick the avocado pit back in the guac and cover the dish with plastic wrap until ready to serve.  

Ingredients

  • 1 1/2 avocados
  • 2 tbsp Spanish onions
  • 1 tbsp roasted jalapenos
  • 1 tbsp cilantro
  • 2 tbsp lime juice
  • salt, to taste

Directions

1. Mash and mix ingredients in a molcajete (stone mortar and pestle). 

 

2. Serve immediately on top of seafood or with corn tortilla chips.
