Laura Prepon's broth-infused brown rice recipe is a healthy grain option to serve at either lunch or dinner. The beef broth gives the rice a tasty kick and a range of additional health benefits. The broth, along with the fiber from the rice, will keep you full for hours after eating. Also, it boosts your immune system, detoxifies your body, and will leave you feeling energized and rejuvenated. Soaking the rice in yogurt makes it easier for the body to assimmilate the nutrients, as yogurt contains enzymes that predigest the rice.

  • 1 cup short-grain brown rice
  • 1/4 cup wild rice (optional)
  • 3 tbsp plain Greek yogurt
  • 3 1/2 cups water
  • 1/2 cup beef broth
  • 1 tsp salt

1. The night before, place rice and wild rice in a glass bowl. Add 3 tablespoons yogurt and 1 1/2 cups of water. Mix until the yogurt is dissolved. Leave on the counter overnight. (This ferments the rice so it’s easier to digest.)

2. The next day, put the rice in a strainer and rinse until the water runs clear.

3. Place the rice in a 4-quart saucepan. Add broth, 2 cups water, and salt. Cook on high until the rice begins to boil, then lower the flame to low, cover, and cook for 30 minutes, stirring occasionally.

4. Stir, then allow to cool. Transfer to a glass container.
