Mango, Coconut, and Thai Basil Ice Cream

Enjoy this refreshing ice cream as dessert on a hot summer night. This tasty treat is super easy to make -- all you need is a blender or food processor and a freezer. 

Ingredients

  • 4 cups frozen mango chunks
  • 1 1/2 cups canned coconut milk
  • 1/3 cup honey
  • 2 tbsp chopped Thai basil leaves
  • 3 tbsp spiced rum
  • pinch of sea salt

Directions

1. Purée all ingredients in a blender until smooth. 

 

2. Pour mixture into a metal pan and freeze for one house. Take the pan out of the freezer and stir (scraping the edges of the pan and mixing well). Then return to freezer. 

 

3. Repeat this process several times until desired consistency is reached.
