Mashed Potato Pancake

Makeover your leftover mashed potatoes from Thanksgiving and repurpose them into savory pancakes. Just add your favorite seasonings to the mix!

Ingredients

  • 2 cups mashed potatoes
  • 1 egg
  • 1/4 cup whole-grain flour
  • salt and pepper, to taste

Directions

1. Mix ingredients in a bowl.

 

2. Spray pan or skillet with cooking spray and heat to medium heat. Pour in potato mix and sautee each side of the pancake until golden brown.
