Mike Isabella's Microwavable Egg Sandwich

Ditch the stove for this healthier version of a traditional breakfast sandwich from chef Mike Isabella. Using the microwave lowers your intake of acrylamide, a cancer-causing compound formed in carbs when you roast or bake at high temperatures.

Ingredients

  • 2 turkey bacon
  • 1 egg
  • 1 whole-grain English muffin
  • 1 Muenster cheese
  • salt

Directions

Place turkey bacon in between paper towels and place on a microwavable plate. Microwave on high for 2 minutes (or longer depending on how crispy you like it). Remove from microwave and set aside. Meanwhile, crack egg into a ramekin that has been coated with non-stick cooking spray. Add a pinch of salt and lightly beat the egg with a fork until whites and yolks are just combined. Microwave on high for 45 seconds to 1 minute. If egg is still slightly runny, cook for a few seconds longer. Remove from microwave and set aside. Place English muffin on a microwavable plate and place cheese slice on one side. Microwave on high for 30 seconds or until cheese has slightly melted. Remove from microwave and top with the turkey bacon, egg and muffin top. Enjoy immediately.
