The best and healthiest way to enjoy your favorite chocolate coconut combination on the Pegan 365 diet are these bars! The best part is that they require no baking, and just have a few simple ingredients. Coconut provides a delicious tropical flavor so you can feel transported when you indulge in these bars.


  • 4 1/2 cups flaked unsweetened coconut
  • 1/4 cup agave nectar
  • 1 tsp vanilla (optional)
  • 1/2 cup coconut oil
  • 3 cups vegan dark chocolate
  • 1/4 cup coconut oil


1. Mix coconut, agave, vanilla, and 1/2 cup of coconut oil together until well combined.


2. Pulse mixture in a food processor until smooth.


3. Evenly spread the coconut bar mixture onto parchment paper lined 8 x 8 cake pan. Place cake pan in the refrigerator.


4. While the coconut bars are hardening, melt chocolate and 1/4 cup of coconut oil in a medium saucepan over medium-low heat. Stir continuously until completely melted and smooth.


5. Remove from heat and take the pan of coconut bars out of the refrigerator. Pour the chocolate ganache mixture over the bars, ensuring they are covered evenly. Place bars back into the fridge until the ganache has hardened.


6. Once hardened, remove the pan from the refrigerator and transfer the parchment paper containing the bars to a cutting board. Using a sharp knife cut the bars into the desired shape and size. Enjoy!
