Pegan 365 Peppermint Coconut Oil Truffles

If you’re looking for a sweet treat or just a little indulgence, this is the perfect dessert for the Pegan 365 diet. These truffles can be made without peppermint oil if you’re not a fan – just substitute vanilla for a simple dark chocolate truffle.


  • 12 oz 60% (or higher) cacao vegan dark chocolate
  • ⅓ cup coconut oil
  • 1 tsp peppermint oil (more or less depending on taste preference)
  • 1 tsp vanilla extract
  • Unsweetened Cocoa Powder
  • Toasted Coconut


1. Take the dark chocolate and chop the bar into small evenly sized pieces (if you’re using chocolate chips, just add them into the saucepan directly).


2. Place the chocolate into a medium sized saucepan with coconut oil. Set the heat to medium-low and stir constantly till the mixture is smooth and creamy with no lumps.


3. Once the right consistency is reached, add peppermint oil and vanilla extract to the mix - stir till combined.


4. Pour the chocolate mixture into a standard size loaf pan (approximately 9" x 5" x 2 ½) or any size smaller pan or dish. Place the pan into the refrigerator to set for at least 2 hours.


5. Once firm, remove from the fridge and let it sit out for 10 minutes. Scoop with a melon baller or cookie scoop to form small truffle balls.


6. Once shaped, roll the truffles in your choice of toppings and serve. The truffles can be stored frozen (don’t add toppings if freezing).
