Celebrate the summer's tomato season with this delicious gazpacho. Serve this chilled in a tall glass and sprinkle with roasted pumpkin seeds to impress your guests. 

Ingredients

  • 1 clove garlic, chopped
  • 1/4 cup roasted pumpkin seeds, plus more for garnish
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 4-5 ripe tomatoes (about 2 pounds) roughly chopped
  • 1 medium English cucumber, roughly chopped
  • small vidalia onion, chopped
  • 1 light green, long Italian pepper chopped
  • Austrian roasted pumpkin seed oil for garnish

Directions

Place all ingredients in a blender and process until smooth.

Yield 4 cups.
