Pina Colada Mousse

Light and airy and not too sweet, this dessert is the perfect ending to a big dinner or treat in the afternoon as a little "pick me up." If your bananas or pineapple are not very sweet, you may want to add a little honey to help out with the flavor.

Ingredients

  • 8 oz silken tofu
  • 8 oz pineapple chunks
  • 8 oz coconut milk
  • 2 very ripe bananas
  • Zest of 1 organic lime
  • 2 tbsp toasted unsweetened coconut flakes

Directions

Purée all ingredients except the coconut flakes until very smooth. Pour into four dessert dishes and refrigerate for about 2 hours or until firm.

Before serving top each dish with 1/2 tablespoon of the coconut flakes.
