Raspberry and Banana Buckwheat Pancakes

Raspberries not only protect your heart health with their combination of antioxidants, vitamin C, and fiber, they also have cancer-fighting compounds. Adding bananas to the mix helps to regulate heart function; the combination of the two fruits makes for a hearty breakfast.

Ingredients

  • 1 banana, ripe
  • 1 tsp vanilla extract
  • 1/4 cup raspberries, fresh and organic
  • buckwheat pancake mix
  • handful raspberries, for topping
  • 3 tbsp maple syrup

Directions

1. Add banana, vanilla extract, and raspberries to the buckwheat pancake mix. Combine the ingredients thoroughly.

 

2. Heat up a pan or griddle with cooking spray or butter. Pour the batter using a ladle or an ice cream scoop to keep the portions equal.

 

3. Once air bubbles form on the pancake, flip it over. Check to make sure that the underside is golden before removing the pancake.

 

4. Top the pancakes with a handful of fresh raspberries and maple syrup.
