  • 2 1/2 pounds boneless pork roast
  • 1 cup pepperoncini peppers
  • 1 cup pepperoncini juice
  • 1 tsp black pepper
  • 1/2 tsp sea salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/8 tsp dried rosemary
  • 1/8 tsp dry mustard, such as Coleman's
  • 3 cups chopped broccoli, spinach, or asparagus


1. Place all ingredients (except vegetables) in a slow cooker.


2. Simmer on low for 6 to 8 hours, or on high for 4 to 5 hours.


3. While waiting for the pork to cook, steam your choice of vegetables.


4. Serve together.
