Roast Beef and Vegetable Lettuce Wraps With Chipotle Vinaigrette

Ingredients

  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 1/4 tsp sea salt
  • 1/8 tsp ground chipotle pepper
  • 2 tbsp walnut oil
  • 2 romaine lettuce leaves
  • 8 oz nitrate-free sliced roast beef
  • 1/4 medium cucumber, thinly sliced
  • 1/4 medium red bell pepper, thinly sliced
  • 2 tbsp thinly sliced white onion

Directions

Combine the lime juice, cilantro, salt and chipotle pepper in a small bowl. Slowly whisk in the oil.

 

Place a lettuce leaf on each of two plates. Top each with half the roast beef, cucumber, bell pepper and onion. Drizzle with lime mixture and serve.
