Rocco DiSpirito's Leafy Green Salad with Creamy Almond Dressing and Radishes

Chef Rocco DiSpirito's negative calorie salad recipe is a healthy alternative to the additive and sugar heavy salad dressings we are used to consuming. It's a big, green, leafy salad that will leave you feeling refreshed and energized. All the negative calorie vegetables in this salad actually have less calories than your body burns metabolizing them, so you're going to be ahead of the game! It's simple and takes only a few minutes to prepare. Give it a try if you are craving something light for either lunch or dinner. 

Ingredients

  • 1/3 cup almonds, lightly toasted and chopped
  • 1 cup water
  • 3 tbsp sherry vinegar
  • 1 tbsp extra virgin olive oil
  • salt
  • pepper
  • 1/8 tsp almond extract
  • 6 heads butter lettuce, heads cut in half and outer leaves removed
  • 4 large radishes

Directions

1. Place 1/4 cup of the almonds and the water in a microwave safe bowl. Cover with parchment paper, and cook on high until tender (5-7 minutes). 

2. Transfer to a blender and add sherry vinegar. Blend until smooth and creamy. You may need a bit more water. 

3. Pour the mixture into a bowl. Whisk in olive oil and almond extract. Season with salt and pepper. Let cool. 

4. Place lettuce in a mixing bowl. Pour the dresing over. Arrange 3 halves of the lettuce on each of the four salad plates. 

5. Top with radishes and remaining almonds.
