Forget zoodles (zucchini noodles), ploodles (eggplant noodles) are becoming the new "it" food. Making eggplant noodles is super simple and can be customized with sauces and toppings to fit your taste. Indulge in pasta without the carbs with this recipe from Rocco DiSpirito. 

Ingredients

  • 1 eggplant
  • 2 tbsp olive oil
  • 1 clove of garlic

Directions

1. Slice eggplant into thin, noodle-like strips with a julienne peeler. 

 

2. Heat olive oil and garlic in a pan over medium heat.

 

3. Saute eggplant in oil and garlic until soft. 

 

4. Top with the sauce of your choosing.
